Chicken Pot Pie

3 chicken breasts or dark meat

1 bag frozen mixed vegetables

1 can cream of chicken soup

¼ lb. Velveeta Cheese

Cook chicken and break/tear into pieces. Cook mixed vegetables, drain and combine soup, chicken, and vegetables; heat, then add Velveeta.

Make two pie crusts. Line pie plate with bottom crust, pour mixture into first crust then put top crust in place. Bake until golden brown.

Baked Chicken

1 tube, approx. Ritz crackers, crushed

1 c. cut-up chicken

½ c. margarine, melted

Dip chicken in oleo and dredge in cracker crumbs. Place chicken in lightly greased baking dish. Bake, uncovered, at 350 degrees about 1 hour or until done.

Note from Honey Bee: As my Grandfather used to say about my Grandmother’s cooking, “Sugarfoot, that is so darn good it will make you slap your grandma!”(He wasn’t stupid enough to try it, nor was I!)

Baked Corn

w/ Green Chilies

2 eggs, beaten

1 can cream style corn

1 (8 oz) carton sour cream

¼ c. melted butter

1 can Whole Kernel Corn, drained

1 ½ c. shredded cheese

½ c. chopped onion

1 (4 oz) can diced green chilies

1 pkg. Jiffy Corn Muffin mix

Preheat oven to 350 degrees. Grease 2 qt. baking dish.

In large bowl, combine: eggs, cream style corn, sour cream and melted butter. Stir in whole kernel corn, cheese, onions and green chilies.

Stir in muffin mix. Bake for 1 hour and 10-15 minutes, or until inserted knife comes out clean and top is golden brown.

Calico Beans

1 lb. ground beef

1 onion

1 can lima beans

1 can pork and beans

1 can pinto beans

½ c. catsup

1 t. salt

1 t. mustard

½ c. brown sugar

½ c. sugar

2 tsp. vinegar

Brown hamburger meat and onion; drain. Drain juice off all beans and add to hamburger meat. Mix remaining ingredients over heat until warm and add to meat mixture. Bake at 350 for 40 minutes.

Sugarless Cake

1 c. dates, chopped

1 c. prunes, chopped

1 c. raisins

1 c. cold water

1 stick margarine, melted

2 eggs

1 t. baking soda

¼ t. salt

1 c. plain flour

¼ t. cinnamon

¼ t. nutmeg

1 t. vanilla

Boil dates and prunes in the one cup of water for 3 minutes; add margarine and raisins and let cool…. Mix flour, soda, salt, eggs, nuts, spices and vanilla. Add to fruit mixture, and stir to blend. Pour into baking dish and bake at 350 for 25 to 30 minutes.
