Hometown Recipes 2-13-18

Would love for our readers to send us some of your family-favorite recipes. I do not cook much, but every now and then, I have to ?break out the cook book? and try something different. So, copy, clip, tear-out, whatever; just send me some recipes. If you like, tell me who ?shared it with you, etc.?



Carmilita Pate

1 (5 oz) pkg noodles

3 T. butter

? c. finely chopped onion

2 T. flour

? t. salt

Dash of pepper

1 ? c. milk

2 c. American cheese, shredded

? c. green pepper, chopped

? c. pimento, chopped

4 eggs, boiled, sliced

Cook noodles according to package directions; drain. Transfer to shallow buttered baking dish. Melt butter in heavy saucepan. Add onion and green pepper. Cook and stir until transparent, but not brown.

Blend in flour, salt and pepper. Add milk and cook, stirring until smooth and thickened. Add cheese and stir over low heat until it melts. Add pimento. Arrange eggs on top of noodles and cover with sauce. Bake at 350 for 20-25 minutes.

Quick Chicken

Pot Pie

1 c. cooked, cubed chicken

8 oz. frozen mixed vegetables

1 can Campbell?s Cream of Chicken Soup

1 pkg. of 2 pie crusts

1/3 soup can of milk (plus additional milk for brushing on top)

Combine chicken, vegetables, soup and milk in a bowl. Mix well. Pour mixture into 1 pie crust. Top with other pie crust. Pinch sides of the two pie crusts together to make a high edge. Brush top of crust with milk. Bake at 350 until crust is brown.

Ranch Potatoes

1 bag of red potatoes

1 lg. bottle of Ranch Dressing

1 bunch of green onions

1 jar of real bacon bits

Boil potatoes, drain, and cut into quarters. Add dressing and mix. Chop onions and add to potatoes. Add bacon bits, and salt and pepper to taste. Mix all together and serve. Mmmm good!

Sweet Potatoes and Cranberries

6 sweet potatoes

1 c. cranberry sauce

? c. fresh orange juice

? c. brown sugar

? t. orange rind

1 ? T. butter

1 c. cranberries

? t. nutmeg

Boil sweet potatoes in their skins until barely tender. Peel, slice thickly, and arrange in a buttered baking dish. In saucepan, mix remaining ingredients. Simmer, uncovered, for five minutes. Pour over sweet potatoes and bake uncovered at 350 degrees for 20 minutes or until glazed and hot.

? c. Crisco

1 egg

2 ? c. flour

1 ? t. soda

1 c. boiling water

1 c. Ribbon Cane syrup

1 t. cinnamon

1 t. ginger

1 t. cloves

Cream sugar and Crisco, add egg, then syrup. Then add flour mixed with spices and soda. Beat well. Add 1 cup of boiling water. ***I always use a bit of vanilla to this; just seems to bring out the flavor more. Bake at 325 degrees for 25-30 minutes.
