Hometown Recipes 12-5-17

(I, personally, have ‘got to watch it’ because Christmas is coming and it is coming q-u-i-c-k!!!)

Coke Salad

2 pkgs. Cherry Jello

1 pint hot water (cooled)

2 small bottles coke cola

#2 can Bing cherries, sliced and drained

#2 can crushed pineapple, drained

2 small Philly cream cheese

1 c. chopped pecans

Combine jello and hot water. Add two small bottles coke cola. Pour slowly and stir to prevent foaming. Add cherries and pineapple. Let stand until partly congealed, then add cream cheese and pecans. Stir and let chill overnight. Servings: 8-10.

Coleslaw Dressing

Marge Slack

1 c. Mayo

1 T. sugar

1 T. vinegar

2 t. mustard

2 T. oil

Dash of salt

Dash of pepper

Mix all ingredients and toss with shredded cabbage. Chill 1 to 2 hours.

Cornbread Salad

1 pan cornbread

1 sm. onion, chopped

1 green bell pepper, chopped

1 tomato, chopped

¾ c. Mayo

½ t. salt

½ t. pepper

2 T. prepared mustard

1 t. sugar

Crumble cornbread in a bowl with green onion, bell pepper and tomato. In a separate, mix Mayo, salt, pepper, mustard and sugar. Pour cornbread, stir gently. Chill. Serve soon after salad is dressed.

Honey Bee’s note: Love this salad, so to keep it fresh, I store moist ingredients in a separate container and dry ingredients in a different container or zip-lock. Mmmm, good!

Yum Yum Salad

2 sm. pkgs. Lemon Jello

2 c. hot water

1 lg. can crushed pineapple juice

1 c .sugar

2 T. lemon juice

8 oa. Cream cheese

1 tall can evap. Milk, chilled

1 c. pecans. Chopped

1 c. grated cheese

Mix Jello and water until dissolved. Heat pineapple (and juice), sugar and lemon juice in a saucepan until sugar is dissolved, but do NOT boil. Pour into Jello mixture. Let chill until thick. Whip evaporated milk. Add to thickened Jello mixture along with grated cheese and pecans. Let chill until set.
