Hometown Recipes 6-13-17

Sharing a few of my five sons? favorite recipes. Raising those boys was pretty when it came to what to put on the table. Simple food, just LOTS of it!

Bee?s Bars

1 lg. box light brown sugar

2 c. biscuit mix

4 eggs, well beaten

2 c. chopped pecans

Powdered sugar

2 T. vanilla

Combine everything EXCEPT the powdered sugar; blend well. Pour into greased and floured 9X13 pan. Bake for about 35 minutes at 325 degrees or til done. Cool thoroughly before cutting into bars. Sift powdered sugar over top.

Honey Raisin Muffins

Yep; you guessed it!

1 ? c. flour

1 T. baking powder

? t. salt

2 T. sugar

2 c. Raisin Bran Cereal

1 c. milk

? c. honey

1 egg

3 T. vegetable oil

Mix flour, baking powder, salt and sugar. Set this aside. In a large bowl, stir together: Raisin Bran, milk and honey. Let stand about 2 minutes, or until cereal is softened.

Add egg and oil; beat well. Add flour mixture, stirring ONLY until combined. Divide evenly into greased muffin pan (that has 12 ?cups?. Bake at 400 degrees for 18 to 20 minutes or until lightly browned. Serve while still warm. DEE-licious!

Cowboy Cake

Uh-huh; it?s my recipe.

2 c. sugar

2 c. hot water

2/3 c. shortening

2 c. raisins

1 t. nutmeg

1 t. cloves

2 t. cinnamon

2 c. pecans, chopped

Mix all together. Bring to a boil. 2nd stage: Let mixture cool to lukewarm stage. Add 2 t. baking soda (softened in 1 tablespoon of warm water.)

Add 4 c. flour, 2 t. baking powder, and pecans.

Pour into baking dish or pan. Bake for 1 hour at 375 degrees.

Fruit Cocktail Cake

2 c. flour

1 ? c. sugar

2 ? t. baking powder

1 t. salt

1/3 c. soft shortening

1 c. liquid (fruit cocktail juice plus just enough water to bring it to 1 cup)

1 t. vanilla

1 egg

1 can fruit cocktail (drained and juice saved)

1 c. pecans

1 c. coconut

Add the cup of f/c and water to all other ingredients and beat well. Bake in greased and floured pan. No icing needed; moist and so good!
